For the crust

  • 1 cup all-purpose flour For the crust

  • 3 cups fresh rhubarb Chopped

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13-inch baking dish with some butter or line it with parchment paper.

Crust Making

  • In a mixing bowl, combine 1 cup of flour, ½ cup of sugar, and melted butter. Mix until crumbly, and press firmly into the prepared baking dish.
  • Bake for 15 minutes until golden and firm.

Filling Preparation

  • In another bowl, beat the eggs, then add 1 cup of sugar, the remaining flour, salt, vanilla extract, and chopped rhubarb.
  • Mix until well combined.

Combine and Bake

  • Pour the rhubarb filling over the pre-baked crust, spreading it evenly.
  • Bake for another 25 to 30 minutes, or until the filling is set and slightly golden.

Cooling

  • Allow the bars to cool completely before slicing.
  • Dust with powdered sugar for a pretty presentation.

Notes

Feel free to add strawberries or blueberries for flavor variation, or replace sugar with honey for a healthier option. Store in an airtight container in the fridge for up to a week or freeze for up to three months.
