Ingredients
  

For the marinade

  • 1 cup plain yogurt Use dairy-free yogurt for a dairy-free option
  • 2 tablespoons olive oil
  • 1 Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste

For the chicken

  • 1 lb boneless, skinless chicken thighs or breasts
  • Fresh cilantro for garnish (optional)

Preparation

  • In a bowl, combine the plain yogurt, olive oil, lemon juice, minced garlic, cumin, paprika, turmeric, salt, and pepper.
  • Place the chicken in the bowl with the marinade, ensuring each piece is well-coated. Cover it and let it marinate for at least 30 minutes (or up to overnight for deeper flavor).

Cooking

  • Preheat your oven to 400°F (200°C) for baking or fire up your grill to medium-high heat.
  • If baking, place the marinated chicken on a lined baking sheet and bake for about 20 minutes, until the chicken is cooked through.
  • If grilling, cook the chicken for 7-8 minutes on each side.

Serving

  • Once fully cooked, remove the chicken from the oven or grill. Let it rest for a few minutes, then slice or serve whole, garnished with fresh cilantro if desired.

Notes

Feel free to add spices like coriander or black pepper for a kick. If looking for lighter alternatives, use chicken breast instead of thighs and opt for low-fat yogurt.
