  • 9–12 sheets Lasagna Noodles No-boil noodles work beautifully to save time.
  • 15 oz Ricotta Cheese Substitute with cottage cheese for a lighter option.
  • 2 cups Mozzarella Cheese, shredded Feel free to mix in some provolone for extra flavor.
  • 1 cup Parmesan Cheese, grated Freshly grated will enhance the flavor significantly.
  • 2 cups Spinach, fresh or 1 cup frozen Spinach blends in well for a nutritional boost.
  • 2 cloves Garlic, minced A must-have for aromatic depth.
  • 1 small Onion, diced Sweet onions add a nice balance to the dish.
  • 1 tbsp Italian Seasoning A tasty mix of herbs to elevate the layers.
  • To taste Salt and Pepper Season to suit your preference.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat a drizzle of olive oil over medium heat. Add the minced garlic and diced onions, cooking until they soften and become fragrant, about 3–5 minutes.
  • In a large mixing bowl, combine the cooked chicken, spinach, ricotta cheese, and half of the mozzarella. Stir in the Italian seasoning, and season with salt and pepper.

Assembly

  • In a baking dish, spread a thin layer of the chicken mixture on the bottom, followed by a layer of lasagna noodles. Repeat layers, finishing with the remaining mozzarella and a generous sprinkle of Parmesan on top.

Cooking

  • Cover the dish with aluminum foil (to prevent burning) and bake for 30 minutes.
  • Remove the foil and bake for another 15 minutes until the cheese is golden and bubbly.

Serving

  • Let it sit for about 10 minutes before slicing. Enjoy how the melty cheese pulls apart with each perfect serving!

Notes

Add sautéed mushrooms or roasted red peppers for a burst of flavor. Fresh basil or parsley sprinkled on top before serving adds color and freshness. For spice lovers, add a pinch of red pepper flakes to the filling. Make it gluten-free with gluten-free lasagna noodles, and use dairy-free cheese for a vegan option.
