Preparation

  • Preheat your oven to 350°F (175°C).
  • Cream together butter and sugar in a large mixing bowl until light and fluffy.
  • Add the eggs and vanilla to the butter mixture, beating until smooth.
  • In a separate bowl, whisk together the flour, baking powder, cocoa powder, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Divide the dough in half. Add a bit more vanilla extract to one half and cocoa powder to the other.
  • Layer spoonfuls of the two doughs onto a baking sheet lined with parchment paper.
  • Use a toothpick or a knife to gently swirl the two doughs together.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For a dairy-free version, use coconut oil and almond milk. Add nuts for extra crunch or dip in chocolate for a festive treat. Store in an airtight container at room temperature for up to a week, or freeze for up to three months.
