Preparation

  • In a large pot, heat a splash of oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Toss in the minced garlic and sauté until fragrant.
  • Add the ground beef to the pot. Cook until browned, breaking it up with a spoon as it cooks, about 7-10 minutes.
  • Stir in the chili powder and cumin, allowing the spices to coat the beef and bloom for a minute.
  • Pour in the beef broth and tomato paste, stirring to combine. Scrape up any flavorful bits stuck to the bottom of the pot.
  • Add the chopped bell pepper and kidney beans, if using. Bring the chili to a gentle simmer and cover it, letting it simmer for about 30 minutes, stirring occasionally.
  • Taste and season with salt and pepper as desired.

Notes

For an extra kick, add diced jalapeños or a splash of hot sauce. You can substitute ground beef with ground turkey or a plant-based alternative. Consider adding roasted corn or diced tomatoes for a fresh twist.
