Ingredients
  

For the Roast

  • 3-4 pounds Chuck roast Well-marbled for tenderness
  • 4 medium Carrots Chopped into large chunks
  • 2 pounds Potatoes Yukon Golds preferred for creaminess
  • 2 medium Onions Chopped
  • 4 cups Beef broth Use low-sodium for a healthier option
  • 4 cloves Garlic Minced
  • 1 tablespoon Thyme Fresh or dried
  • 1 tablespoon Rosemary Fresh or dried
  • 2 teaspoons Salt To taste
  • 1 teaspoon Pepper To taste
  • 2 tablespoons Worcestershire sauce Adds umami flavor

Preparation

  • Chop the carrots, potatoes, and onions into large chunks.
  • In a hot skillet, sear the chuck roast on each side until browned.

Cooking

  • Place the seared roast at the bottom of the slow cooker.
  • Layer in the carrots, potatoes, onions, garlic, and herbs.
  • Pour the beef broth and Worcestershire sauce over the roast and vegetables.
  • Sprinkle salt and pepper generously on top.
  • Cover and cook on low for 8 hours or high for 4 hours.
  • Once done, shred the meat with two forks and stir to mix it with the gravy before serving.

Notes

Consider adding parsnips for a twist or mushrooms for an earthy flavor. Can be frozen for up to 3 months.
