  • 3-4 pieces Potatoes Russets or Yukon Golds work well.
  • 1 large Onion Diced for depth and sweetness.
  • 4 cloves Garlic Minced for aromatic flavor.
  • 2 cups Beef Broth Essential for flavor.
  • 1 tablespoon Worcestershire Sauce Adds delicious umami flavor.
  • 2 teaspoons Dried Thyme Compliments the meat beautifully.

Preparation

  • Wash, peel, and chop the carrots and potatoes. Dice the onion and mince the garlic, then set aside.
  • Optional: Heat a splash of oil in a skillet and sear the chuck roast on all sides until browned.

Cooking

  • Layer carrots and potatoes in the bottom of the slow cooker.
  • Place the seared roast on top. Sprinkle onions and garlic over the roast.
  • Pour in beef broth and Worcestershire sauce, then season with thyme, salt, and pepper.
  • Cover and cook on low for 8 hours or high for 4 hours.
  • Once cooked, remove the roast and vegetables, shred the meat, and return it to the pot. Let it mingle with the juices before serving.

Notes

For variations, add parsnips or turnips for a festive touch. Consider using sweet potatoes for a healthier option or add a splash of red wine to the broth for extra flavor.
