Preparation

  • Generously season your chuck roast with salt and pepper on all sides.
  • In a skillet over medium-high heat, add olive oil. Once hot, sear the roast for 3-4 minutes on each side until browned.
  • Transfer the seared roast to your slow cooker. Arrange the chopped onion, sliced carrots, and cubed potatoes around the meat.
  • Pour the beef broth into the slow cooker and sprinkle minced garlic, thyme, and rosemary over the top. Drizzle Worcestershire sauce on top.
  • Cover the slow cooker and set it on low for 8 hours (or high for 4 hours).
  • Once the time is up, carefully remove the roast from the slow cooker and shred it with two forks.

Notes
