Preparation

  • In a large pot, heat olive oil over medium heat. Add the chopped onions, carrots, and celery, stirring until they soften.
  • Stir in the minced garlic, then add the whole chicken, allowing it to brown slightly on all sides for about 5 minutes.
  • Carefully pour in the chicken broth, ensuring the chicken is fully submerged.
  • Add thyme, bay leaf, salt, and pepper. Bring to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for 30-35 minutes.
  • When the chicken is cooked through, carefully remove it from the pot. Let it cool for a few minutes, then shred the chicken into bite-sized pieces and return it to the soup.
  • Taste the soup and adjust seasoning as needed. Simmer for an additional 5-10 minutes.
  • Ladle the soup into bowls, garnish it with fresh parsley, and relish the warmth.

Notes
