  • 4 pieces chicken breasts or thighs Thighs stay juicy, breasts cook faster if pounded thinner.
  • 4 cloves fresh garlic More garlic enhances flavor.
  • 1/2 cup sun-dried tomatoes Adds tangy flavor.
  • 2 cups fresh spinach For color and freshness.
  • 1 cup cream (or half and half) For the creamy sauce.
  • 1/2 cup Parmesan cheese Saltiness helps thicken the sauce.
  • 1 teaspoon Italian seasoning For herby flavor.
  • 1 tablespoon olive oil For frying the chicken.
  • 1 cup chicken broth For deglazing the pan and adding flavor.
  • 1 lemon squeeze of lemon Optional, but enhances flavor.
  • 1 pinch red pepper flakes Optional, for heat.

Instructions
 

Preparation

  • Season the chicken with salt, pepper, and Italian seasoning on both sides.
  • Sear the chicken in a hot pan with olive oil for about 4 to 6 minutes per side, until golden.
  • Remove the chicken and set it on a plate.
  • In the same pan, cook the garlic for about 30 seconds over medium heat.
  • Add sun-dried tomatoes and stir for another minute.
  • Pour in the chicken broth and scrape the bottom of the pan to lift flavors.
  • Add cream and Parmesan, stir until smooth and creamy.
  • Add spinach and wilt it in the sauce.
  • Return the chicken to the pan and simmer gently until cooked through.
  • Finish with black pepper and optional squeeze of lemon.

Notes

For a low-carb version, replace rice with cauliflower rice, zucchini noodles, or sautéed cabbage. Use half and half instead of heavy cream if desired. Season generously for best flavor.
