  • 4 pieces chicken thighs (bone-in or boneless)
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 teaspoons paprika (smoked for extra depth)
  • 1 teaspoon cumin
  • ½ teaspoon cinnamon
  • to taste Salt and pepper
  • 1 can (14 oz) diced tomatoes
  • to taste Fresh parsley for garnish (or cilantro for a twist)

Instructions
 

Cooking the Chicken

  • In a large skillet over medium heat, warm the olive oil until it shimmers slightly.
  • Add the finely chopped onion to the skillet. Sauté for about 5 minutes, or until the onion is translucent and fragrant.
  • Stir in the minced garlic, paprika, cumin, and cinnamon. Cook for another minute, allowing those spices to release their wonderful aromas.
  • Carefully place the chicken thighs in the skillet, seasoning them lightly with salt and pepper. Sear them for 5 minutes on each side until they turn golden brown.
  • Pour in the diced tomatoes and bring the mixture to a gentle simmer. Cover and cook on low heat for about 20 minutes, or until the chicken is cooked through and tender.
  • Taste and adjust the seasonings if needed. If you want a creamier sauce, stir in a dollop of yogurt at the end.
  • Serve hot, garnished with fresh parsley or cilantro.

Notes

For a lighter version, swap chicken thighs for chicken breasts. This dish can be stored in an airtight container in the fridge for up to three days or frozen for up to three months.
