  • 1 lb Chicken breast Can substitute with tofu or tempeh for vegetarian option.
  • 4 pieces Whole wheat tortillas Corn tortillas work great too!
  • 1 piece Red bell pepper Can swap with carrots or cucumbers for extra crunch.
  • 1 piece Cucumber Fresh and cool balance for the richness of peanut sauce.
  • 1/4 cup Fresh cilantro, chopped Can substitute with parsley if preferred.
  • 1 cup Peanut sauce Store-bought options are fine or try making your own!

Preparation

  • Slice the chicken breast into thin strips.
  • In a pan over medium heat, add a splash of oil. Cook the chicken for about 5-6 minutes until golden brown and cooked through.
  • While the chicken cooks, slice the red bell pepper and cucumber into thin strips, and chop the cilantro finely.

Assembly

  • Take a tortilla and lay it flat. Spread a generous spoonful of peanut sauce in the center.
  • Add the cooked chicken, red bell pepper slices, cucumber strips, and sprinkle cilantro.
  • Fold in the sides of the tortilla and roll tightly from the bottom to the top.
  • Cut each wrap in half at a diagonal and arrange on a plate. Drizzle with extra peanut sauce for a finishing touch.

Notes

These wraps can be prepared a day ahead. Store the filling separately from the tortillas to prevent sogginess. For added crunch, toss in cabbage or lettuce, and add sriracha or chilies for spice. Let kids customize their own wraps for a fun dinner option.
