  • 1/4 cup mayonnaise For an extra rich taste; adjust based on dietary needs.
  • 1 lime Freshly squeezed for a zesty kick.
  • 1/2 teaspoon chili powder Adds a hint of warmth and depth to flavors.

Preparation

  • Cook the pasta in a large pot of salted boiling water according to package instructions. Drain and set aside to cool slightly.
  • Prepare the corn. If using fresh corn, grill or roast it until slightly charred, about 5-7 minutes. If using frozen corn, steam it until heated through.
  • In a mixing bowl, combine the Greek yogurt and mayonnaise, stirring until smooth. Add freshly squeezed lime juice, chili powder, salt, and pepper, blending to create a lively dressing.
  • Once the cooked pasta and corn have cooled enough to handle, fold them into the yogurt mixture, ensuring everything is well-coated.
  • Taste and adjust seasoning as desired before transferring the salad to a serving dish.
  • Optionally, garnish with cilantro and crumbled feta for a burst of freshness.

Notes

For a healthier version, replace the mayonnaise entirely with Greek yogurt. Incorporate more veggies by adding diced bell peppers or chopped tomatoes. You can also add chopped green onions or diced avocado.
