  • Core and dice the apples into small pieces. If you like a bit of texture, leave the skin on. Set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  • In another bowl, whisk together the milk, egg, and vanilla extract until well blended.
  • Pour the wet mixture into the dry ingredients. Gently fold until just combined—don't overmix! You’ll want little pockets of flour, as they create a fluffy fritter.
  • Carefully fold in the diced apples, ensuring they are evenly distributed throughout the batter.
  • Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  • Using a spoon or your hands, scoop out about a tablespoon of batter and shape it into a patty approximately 1/2-inch thick.
  • Lightly coat the air fryer basket with cooking spray and place the fritters in a single layer. Cook for about 8-10 minutes on one side, then carefully flip and cook for another 5-7 minutes until they are golden brown.
  • Allow them to cool slightly on a wire rack while you whip up a quick glaze or enjoy them as is.

Notes

For additional sweetness, drizzle a simple icing made from powdered sugar and milk over the cooled fritters. You can also experiment with spices like ginger or cardamom, or mix in other seasonal fruits for a fun twist. To make this recipe vegan, use plant-based milk and a flaxseed egg.
