Preparation

  • Preheat your oven to 400°F (200°C) to create the perfect roasting environment.
  • In a mixing bowl, combine sweet mustard, hot mustard, minced garlic, soy sauce, honey, olive oil, salt, and pepper. Mix until well blended.
  • Place chicken thighs in a large zip-top bag or bowl, pour the marinade over them, and toss to coat. Let them marinate for at least 15 minutes (or up to overnight in the fridge for deeper flavor).

Cooking

  • Line a baking dish with parchment paper and arrange the marinated chicken thighs skin-side up.
  • Bake in the preheated oven for 30-35 minutes or until the internal temperature reaches 165°F (75°C) and the edges turn golden brown. Baste halfway through for more flavor.
  • Let it rest for 5 minutes before serving.

Notes
