  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes Fire-roasted tomatoes will add a smoky touch.

Spices and Seasoning

  • 2 tablespoons chili powder Adjust based on your spice tolerance.
  • 1 tablespoon cumin
  • 1 tablespoon brown sugar This adds a wonderful hint of sweetness.
  • Salt and pepper to taste

Garnish

Cooking Instructions

  • Heat a drizzle of olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  • Stir in the minced garlic and red bell pepper; cook for another 2-3 minutes until the bell pepper softens.
  • Add the ground beef (or turkey) to the pot. Break it apart with a wooden spoon and cook until browned, about 5-7 minutes. Season with salt and pepper.
  • Add the diced tomatoes, kidney beans, black beans, chili powder, cumin, and brown sugar to the pot. Stir well to combine.
  • Bring to a gentle boil, then reduce the heat and let it simmer for about 15 minutes.
  • Taste your chili, adjusting seasoning as needed. Feel free to add more salt, pepper, or chili powder if you like it spicier.
  • Ladle the chili into bowls and top with fresh cilantro for a delightful garnish.
