Ingredients
  

For the Meatballs

  • 1 lb Ground Beef Can substitute with ground turkey for a leaner option.
  • ½ cup Breadcrumbs Use whole wheat for a nutty flavor or gluten-free if needed.
  • 1 Egg Flax eggs are a great vegan substitute.
  • 1 cup Pineapple Chunks Fresh or canned.
  • 1 Bell Pepper, diced Any color variety you prefer.
  • 1 Onion, finely chopped Shallots can provide a milder taste.
  • 2 cloves Garlic, minced Adds aroma to the dish.

For the Sauce

  • ¼ cup Soy Sauce Tamari works well for gluten-free.
  • ¼ cup Ketchup Opt for low-sugar varieties if desired.
  • 2 tablespoons Brown Sugar For sweetness balance.
  • 2 tablespoons Vinegar White or apple cider. Lemon juice can be a good alternative.

Preparation

  • Preheat the Oven: Set your oven to 375°F (190°C).
  • Prepare the Meatball Mixture: In a large bowl, combine the ground beef, breadcrumbs, egg, half the diced onion, garlic, and a pinch of salt and pepper. Mix until just combined.
  • Form the Meatballs: With damp hands, roll the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.

Cooking

  • Bake the Meatballs: Bake for about 20 minutes until golden and cooked through.
  • Make the Sauce: While the meatballs are baking, whisk together the soy sauce, ketchup, brown sugar, vinegar, and remaining onion in a saucepan over medium heat. Cook until combined and slightly thickened.
  • Add Pineapple and Peppers: Stir in the pineapple chunks and diced bell pepper, allowing the mixture to simmer for about 5 minutes.
  • Combine: Once the meatballs are done, gently coat them in the sauce and let them simmer together for an additional 5-10 minutes.
  • Serve Hot: Garnish with sesame seeds or chopped green onions if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, warm in the microwave or oven. Can freeze for up to 3 months.
