Preparation

  • In a medium bowl, beat the softened butter until it is fluffy and pale—about 2 minutes.
  • Gradually add 3 cups of powdered sugar, mixing on low so it incorporates slowly without a cloud of sugar dust.
  • Add the vanilla extract, a pinch of salt, and 1 tablespoon of milk. Beat until smooth. If the frosting is too thick to spread, add milk one teaspoon at a time until you reach a spreadable consistency.
  • Add the final cup of powdered sugar if you need a stiffer frosting for piping. For a silkier glaze, add an extra teaspoon of milk.
  • Divide into small bowls, tint with gel color as desired, and use immediately to frost cooled sugar cookies.
  • Allow decorated cookies to rest at room temperature for 15–30 minutes so the frosting sets slightly before stacking.
