Preparation

  • Preheat your oven to 375°F (190°C).
  • In a bowl, combine the ricotta cheese, mozzarella cheese, minced garlic, fresh spinach, salt, and pepper. Mix until well combined.
  • Lay the chicken breasts flat on a cutting board and cut a pocket into each breast.
  • Spoon the creamy spinach mixture into each chicken breast pocket.
  • Use toothpicks to close the pockets, securing the filling inside, then brush the outside with olive oil and season with salt and pepper.

Cooking

  • Place the stuffed chicken breasts in an oven-safe dish and bake for 30 minutes, or until cooked through.
  • Let the chicken rest for a few minutes before serving.

Notes
