  • 1 cup 1 cup boiling water Dissolves the jello fully for a smooth set.
  • 1 cup 1 cup cold water To cool the mixture before combining with dairy.
  • 1 can 1 (8-ounce) can crushed pineapple, drained Adds bright, juicy sweetness; swap for fresh diced strawberries for a lighter option.

For the Creamy Mixture

  • 1 cup 1 cup sour cream Lends tang and body; swap Greek yogurt for a healthier option.
  • 1 cup 1 cup whipped topping, thawed Fold in for creaminess; use homemade whipped cream for an extra-special note.
  • 1 cup 1 cup miniature marshmallows For that classic, pillowy mouthfeel; use reduced-sugar marshmallows if preferred.

Optional Garnish

  • handful a handful of chopped pecans or sliced almonds For texture; optional.

Instructions
 

Preparation

  • In a medium bowl, pour the strawberry jello powder over 1 cup of boiling water. Stir until completely dissolved and glossy.
  • Add 1 cup of cold water, stirring briefly to bring the mixture down in temperature.
  • Fold in the drained crushed pineapple.
  • In a separate bowl, combine the sour cream and whipped topping until smooth.
  • Pour about one cup of the cooled jello-fruit mixture into the sour cream mixture and stir quickly to temper.
  • Slowly fold the jello-sour cream mixture back into the remaining jello mixture until evenly pink and smooth.
  • Add the miniature marshmallows and gently fold them in.
  • Transfer the mixture to a decorative bowl or a 9x9-inch dish. Cover and chill for at least 2 hours until set.

Serving

  • Before serving, sprinkle with chopped nuts if using, or top with fresh strawberry slices.
  • Serve cold and watch the smiles around your table.

Notes

For a lighter option, replace whipped topping with Greek yogurt and reduce the marshmallows. To make it festive, fold in sprinkles or fresh strawberry purée. Store leftovers in the refrigerator for up to 3 days.
