Cooking

  • Heat a large skillet or wok over medium-high heat and add sesame oil. When the oil is hot and shimmering, add the sliced chicken in a single layer. Let it sear without moving for 1–2 minutes.
  • Stir-fry the chicken until golden and cooked through, about 4–5 minutes depending on thickness.
  • Add the shredded cabbage or snap peas and cook for another 1–2 minutes until just crisp-tender.
  • Pour the sauce over the chicken and vegetables, then add the cooked noodles. Toss vigorously to coat every strand.
  • If you want an extra glossy sauce, stir in the cornstarch slurry and cook for another 30–60 seconds until thickened.

Finishing

  • Finish with sliced green onions and a sprinkle of sesame seeds. Taste and adjust seasoning as needed.
