Ingredients
  

Noodles

  • 12 ounces noodles (lo mein, spaghetti, or rice noodles) Any long noodle works — rice noodles make it gluten-free.

Chicken

  • 1 pound boneless skinless chicken thighs, thinly sliced Thighs stay juicier; breasts are leaner.

Sauce

  • 4 tablespoons soy sauce (or tamari for gluten-free) Use low-sodium if preferred.
  • 3 tablespoons honey or brown sugar Gives the sticky glaze; use maple syrup for a different sweetness.
  • 4–5 large cloves garlic, minced The star of the show — adjust to taste.
  • 1 tablespoon rice vinegar (or apple cider vinegar) Brightens the sauce.
  • 1 tablespoon sesame oil Adds deep nutty aroma; use neutral oil if needed.
  • 1 teaspoon cornstarch mixed with 2 tablespoons water For that glossy, clingy sauce.

Cooking essentials

  • 2 tablespoons vegetable oil for cooking Or any high-heat oil.
  • 2 stalks green onions, sliced Freshness and crunch.
  • toasted sesame seeds for garnish
  • Optional: chili flakes or sriracha for heat
  • Optional: a handful of snap peas or shredded carrots to add color

Preparation

  • Bring a pot of salted water to a boil and cook the noodles according to package directions until just al dente. Drain and toss with a splash of sesame oil to keep them from sticking.
  • In a small bowl, whisk together soy sauce, honey, rice vinegar, and cornstarch slurry. Set aside — this is your glossy sticky sauce.

Cooking

  • Heat a large skillet or wok over medium-high heat. Add vegetable oil and when it shimmers, add the sliced chicken in a single layer. Let it sear without moving for 2 minutes to get color.
  • Stir the chicken and cook until almost done, about 3–4 minutes. Push the chicken to the side and add the minced garlic.
  • Pour the sauce into the pan, stirring to coat the chicken. Reduce heat to medium and let the sauce bubble and thicken until it becomes sticky and clings to each piece of chicken, about 2 minutes.
  • Add the cooked noodles to the pan and toss gently but thoroughly so every strand is lacquered with sauce. If the mixture seems dry, splash in a tablespoon of water or chicken broth.
  • Taste and adjust: add more soy for salt, honey for sweetness, or chili for heat. Finish with sliced green onions and toasted sesame seeds.
  • Serve immediately and watch the way the glossy noodles shine on every plate.

Notes

Store leftovers in an airtight container for up to 3 days. You can freeze the cooked chicken and noodles without the green onions for up to 2 months. Thaw overnight in the refrigerator.
