  • 1 piece smoked ham hock Adds a rich, smoky flavor.

  • 2 cloves garlic, minced Elevates the flavor profile.
  • 6 cups vegetable or chicken broth Good quality broth is essential.
  • 2 leaves bay leaves Enhances aroma.
  • to taste black pepper Season to taste.

Preparation

  • Rinse the split peas under cold water to remove any impurities.
  • Chop the onions, carrots, and celery to create a colorful mirepoix.

Cooking

  • In a large pot, heat a drizzle of olive oil over medium heat. Add the onions, carrots, and celery. Sauté for about 5 minutes until they soften.
  • Stir in minced garlic for an additional minute.
  • Toss in the rinsed split peas, the ham hock, bay leaves, and broth. Bring to a boil, then reduce heat to low, covering the pot to simmer.
  • Let the soup simmer for about 1 hour, stirring occasionally.
  • Remove the ham hock, shred the meat, and return it to the pot. Discard the bay leaves and add salt and pepper to taste.

Notes

Feel free to personalize your soup with red pepper flakes, or for a vegetarian version, skip the ham and enhance with smoked paprika.
