Cooking Steps

  • In a large skillet, heat the olive oil over medium heat. As it shimmers, add the diced onion and red pepper, sautéing until they soften and start to caramelize, about 5 minutes.
  • Stir in the minced garlic, and let it sizzle for about 1 minute.
  • Add the canned diced tomatoes and tomato paste, stirring well.
  • Season with cumin, paprika, cayenne, salt, and pepper. Allow the mixture to simmer for about 5 minutes, thickening nicely.
  • Create small wells in the sauce with the back of a spoon and crack one egg into each well. Cover the skillet and cook for 5-7 minutes until the egg whites are set but the yolks are still runny.
  • Sprinkle the crumbled goat cheese over the shakshuka just before the eggs finish cooking.
  • Garnish with fresh cilantro or parsley, and serve hot!
