Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large pot of salted water, cook the pasta until al dente according to package instructions. Drain and set aside.
  • In a large skillet, over medium heat, add the spicy sausage. Cook until browned, about 5-7 minutes, breaking it into smaller pieces.
  • Add the diced onion and bell peppers, cooking until softened, about 3-4 minutes.
  • Stir in the minced garlic and allow it to sizzle for about 30 seconds.
  • Pour in the crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Let simmer for about 5 minutes.
  • In a large mixing bowl, combine the cooked pasta with the sausage and tomato mixture, stirring to coat.

Assembly and Baking

  • Transfer the mixture into a greased casserole dish. Top with shredded mozzarella and grated Parmesan.
  • Bake in the preheated oven for 20-25 minutes until bubbly and the cheese is melted and golden.
  • Let rest for 5 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Casserole freezes well for up to 3 months; thaw overnight in the refrigerator before reheating.
