  • 1/3 cup chopped red onion Green onion can be used for a milder bite.
  • 1/4 cup finely chopped cilantro Optional for a fresh kick.
  • 1 whole jalapeño Seeded and minced, adjust spiciness to your preference.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1/3 cup grated cheese Mexican blend or sharp cheddar.
  • Oil for frying Can use canola, vegetable, or olive oil.

Preparation

  • Start by ensuring your ingredients are measured and ready. Finely chop your vegetables and get ready to mix!
  • In a large bowl, combine the all-purpose flour, cornmeal, baking powder, smoked paprika, salt, and black pepper. Whisk together until well-blended—it should smell divine!
  • In another bowl, crack the egg and beat it lightly. Add the fresh corn, jalapeño, red onion, and cilantro. Mix well.
  • Gradually add the wet mixture to the dry ingredients, stirring gently until everything is just incorporated. Be careful not to overmix; you want a batter that holds together but isn’t too dense.
  • Fold in the cheese until it’s evenly distributed throughout the mixture.

Frying

  • In a frying pan, heat about 1/4 inch of oil over medium-high heat. Once hot, use a spoon to drop small amounts of the corn mixture into the oil.
  • Fry for 2-3 minutes per side, or until golden brown and crisp.
  • Use a slotted spoon to remove the bites from the oil and place them on paper towels to drain any excess oil.
  • Serve warm!

Notes

For a healthier alternative, try baking the bites at 375°F (190°C) for about 20 minutes, turning halfway through. Each serving contains approximately 150 calories, with 5g protein, 8g fat, and 15g carbohydrates.
