For the Cobbler

  • 1 cup all-purpose flour (or gluten-free blend)
  • 1 cup granulated sugar (or coconut sugar) Consider using coconut sugar for a healthier twist.
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (or almond/oat milk for dairy-free)
  • 1/4 cup unsalted butter, melted (or coconut oil for dairy-free)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional) For extra flavor.

For the Topping

  • 1/4 cup brown sugar
  • 2 teaspoons cinnamon
  • 1/2 cup chopped pecans (or walnuts)

Preparation

  • Preheat your oven to 350°F (175°C). Grease an 8×8 baking dish.

Mixing Dry Ingredients

  • In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.

Blending Wet Ingredients

  • In another bowl, whisk together the milk, melted butter, and vanilla extract until smooth.

Combining Mixtures

  • Gradually pour the wet mixture into the dry ingredients and stir until just combined.

Pouring and Sprinkling

  • Transfer the batter into the prepared baking dish. In a small bowl, mix together the brown sugar and cinnamon, then sprinkle over the batter along with the chopped pecans.

Baking

  • Bake for 30 minutes or until golden brown and a toothpick comes out clean. Allow to cool for at least 10 minutes before serving.

Notes

Serve warm with vanilla ice cream or a dollop of whipped cream. Try with caramel sauce or fresh apples on the side.
