Main Ingredients

  • 1 pound smoked sausage (like kielbasa or andouille) Use turkey or chicken sausage for a leaner option.
  • 4 cups diced potatoes (Russets or Yukon Gold) Cauliflower can replace traditional potatoes for a lower-carb version.
  • 1 cup shredded cheddar cheese Consider using reduced-fat cheese to cut calories.
  • 1 cup cream cheese
  • 1 cup sour cream Replace with Greek yogurt for a protein boost.
  • ½ cup milk
  • 1 tablespoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt Season generously.
  • ½ teaspoon black pepper
  • 1 cup chopped green onions For garnish.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the diced potatoes with the onion powder, garlic powder, salt, and pepper. Toss until the spices coat every piece.
  • In a skillet over medium heat, lightly brown the smoked sausage for about 5-7 minutes.

Combining and Baking

  • In a large mixing bowl, blend the cream cheese, sour cream, and milk until smooth.
  • Add in the cooked sausage and seasoned potatoes, stirring well to ensure everything is evenly incorporated.
  • Spoon the mixture into a greased casserole dish and top with shredded cheddar cheese.
  • Bake uncovered for 75 minutes or until the potatoes are tender and the cheese is bubbly.

Serving

  • Once out of the oven, sprinkle chopped green onions for a fresh touch.
  • Let the casserole sit for about 10 minutes before serving.

Notes

For best results, choose potatoes that are similar in size and always allow the casserole to rest to firm up. Storing leftovers in an airtight container is recommended for up to three days.
