Instructions
 

Preparation

  • Season the chicken breasts with salt and pepper, giving them a generous sprinkle.
  • In your slow cooker, place the seasoned chicken breasts at the bottom.
  • Add the sun-dried tomatoes, minced garlic, and Italian seasoning on top.
  • Pour the heavy cream over the chicken and veggies.
  • Gently stir in the spinach, making sure it gets coated.
  • Cover the slow cooker and set it to low for 6 to 8 hours or high for 3 to 4 hours.

Finishing

  • Once cooked, shred the chicken with two forks, stir to combine, and garnish generously with fresh basil before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat gently with a splash of cream for a silky sauce. Consider using Greek yogurt instead of heavy cream for a lighter option.
