  • 1 tsp Italian seasoning A blend that encapsulates the essence of Tuscany; use fresh herbs if available.

Preparation

  • Season the chicken breasts with salt and pepper.
  • Place the seasoned chicken in the bottom of the slow cooker.
  • Pour the chicken broth over it, then sprinkle the minced garlic, Italian seasoning, and sun-dried tomatoes on top.

Cooking

  • Cover and set your slow cooker to low for 4–6 hours or high for 2–3 hours.
  • About 30 minutes before serving, stir in the heavy cream and spinach, covering again to allow the spinach to wilt and the sauce to thicken.

Serving

  • Before serving, sprinkle with freshly grated Parmesan cheese, and enjoy.

Notes

For healthier alternatives, use Greek yogurt instead of heavy cream. This dish pairs beautifully with rice, pasta, or crusty bread.
