Main Ingredients

  • 4 pieces boneless, skinless chicken breasts Lean protein that becomes tender and juicy.
  • 1 cup sun-dried tomatoes (packed in oil) For a burst of flavor; you can use dried tomatoes for a lower-fat option.
  • 1 cup spinach Fresh or frozen, this adds a vibrant color and nutrient boost.
  • 1 cup heavy cream Creates a luscious, creamy sauce; for a lighter version, substitute with Greek yogurt.
  • 1/2 cup chicken broth Adds depth; homemade broth is best, but store-bought works perfectly.
  • 4 cloves garlic, minced For that warm, comforting aroma; use fresh for the best flavor.
  • 1 teaspoon Italian seasoning A fresh herb mix adds authenticity; feel free to customize with your favorites.
  • to taste salt and pepper Essential for balancing the flavors.
  • Parmesan cheese (for serving) This indulgent treat elevates the dish; consider using nutritional yeast for a vegan option.

Instructions

Preparation

  • Start by seasoning the chicken breasts with salt and pepper. Place them in the slow cooker base, creating a snug fit.
  • Layer the sun-dried tomatoes and minced garlic over the chicken. This is when your kitchen begins to fill with that heavenly aroma.
  • Add the chicken broth around the chicken, helping as much flavor as possible to infuse during cooking.
  • Evenly sprinkle the Italian seasoning across the top for that signature Tuscan flavor.

Cooking

  • Cover the slow cooker and set it to cook on low for 4–6 hours, or high for 2–3 hours.
  • About 30 minutes before serving, stir in the spinach and heavy cream.
  • Once the chicken is tender and flavors melded, shred the chicken gently with forks and mix it with the creamy sauce before serving it over pasta, rice, or bread.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. For reheating, warm on low heat adding a splash of cream or broth.
