Main Ingredients

  • 1 lb Italian sausage Or any sausage you prefer; turkey sausage works for a healthier option.
  • 4 medium-sized potatoes Diced into bite-sized pieces; russet or Yukon gold recommended.
  • 1 onion Chopped, adds depth of flavor.
  • 1 cup shredded cheddar cheese Feel free to swap for your favorite cheese.
  • 1 can cream of mushroom soup The heart of the creaminess; substitute with homemade mushroom sauce if desired.
  • ¼ cup milk For a creamy texture; almond milk can be used for a lighter option.
  • Salt and pepper To taste.
  • Chopped parsley For garnish, optional.

Instructions
 

Preparation

  • Layer your ingredients by placing the diced potatoes at the bottom of the slow cooker.
  • Slice the Italian sausage into bite-sized pieces and scatter it over the potatoes.
  • Sprinkle the chopped onion over the sausage.
  • In a bowl, mix the cream of mushroom soup and milk until smooth and pour this over the ingredients in the slow cooker.
  • Season with salt and pepper.
  • Sprinkle half of the cheddar cheese over the top and reserve the other half.

Cooking

  • Cover the slow cooker and set it on low for 6–8 hours or high for 3–4 hours.
  • About 15 minutes before serving, sprinkle the remaining cheddar cheese on top and cover to allow it to melt.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. To reheat, thaw and warm in the microwave or oven.
