  • 2-3 pounds Pork Loin The star of the show! Tender and juicy.
  • 1 jar Sauerkraut Adds tanginess; about 1 pound.
  • 2-3 pieces Apples, sliced Use sweet varieties like Fuji or Honeycrisp.
  • 1 piece Onion, sliced Adds depth and sweetness.
  • 3 cloves Garlic, minced Enhances all flavors.
  • 1 teaspoon Caraway Seeds, optional Adds a unique earthy flavor.
  • 1 cup Broth Chicken or vegetable, keeps pork moist.
  • Salt and Pepper to taste Enhances all flavors.

Instructions
 

Preparation

  • Season the pork loin generously with salt and pepper on all sides.
  • Place the sliced onion, garlic, and caraway seeds (if using) at the bottom of your slow cooker.
  • Spoon the sauerkraut over the onions, including the juices.
  • Carefully place the seasoned pork loin on top of the sauerkraut.
  • Scatter the sliced apples over the pork.
  • Pour the broth around the sides of the slow cooker.

Cooking

  • Cover and set your slow cooker to low for 6-8 hours or high for 4-5 hours.
  • Once cooked, shred the pork with two forks and toss it together with the sauerkraut and apples before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. You can replace pork loin with pork tenderloin or substitute apples with pears. For added depth of flavor, sear the pork before slow cooking.
