Preparation

  • Pat your chicken dry and season liberally with salt and pepper.

Sautéing

  • In a skillet over medium heat, drizzle a tablespoon of olive oil. Once shimmering, add minced garlic and sauté until fragrant.

Cooking

  • In a slow cooker, place the chicken, sautéed garlic, thyme, chicken broth, and lemon juice. Stir gently.
  • Cover and set the slow cooker to low for 4-6 hours or high for 2-3 hours.
  • Once cooked, shred the chicken with two forks and mix it back into the juices.

Serving

  • Garnish with lemon slices and fresh thyme before serving.

Notes

Store leftover chicken in an airtight container in the fridge for up to 4 days. For freezing, cool down adequately before transferring to a freezer-safe bag. It can be kept for up to 3 months. Reheat by thawing overnight in the fridge, then warming on the stovetop or in the microwave.
