Ingredients
  

Meat Base

  • 1 pound ground beef or Italian sausage Use turkey for a leaner option.
  • 1 onion Chopped, can use shallots for a milder taste.
  • 3 cloves garlic Minced.

Soup Ingredients

  • 1 can (28 ounces) crushed tomatoes Creates the luscious broth.
  • 4 cups beef or vegetable broth Opt for low-sodium if desired.
  • 2 tablespoons Italian seasoning For classic Italian flavor.
  • 8 ounces lasagna noodles Can break into pieces.
  • 2 cups fresh spinach Kale makes a great alternative.
  • 1 cup ricotta cheese Can substitute with cottage cheese.
  • 1 cup shredded mozzarella cheese Essential for the lasagna flavor.
  • salt and pepper To taste.

Preparation

  • In a skillet over medium heat, brown the ground meat with chopped onions for 5-7 minutes. Drain excess fat if needed.
  • Stir in the minced garlic and cook for an additional minute.
  • Transfer the meat mixture to your slow cooker. Add crushed tomatoes, broth, Italian seasoning, salt, and pepper. Stir to combine.
  • Cover and cook on low for 6 hours or high for 3 hours.
  • About 30 minutes before serving, break the lasagna noodles into pieces and stir them into the slow cooker.
  • Add the fresh spinach and mix until wilted.
  • Spoon in dollops of the ricotta cheese and let it melt slightly.
  • Serve topped with shredded mozzarella cheese.

Notes

Add chopped red pepper flakes for spice, or substitute ground meat with lentils or mushrooms for a vegetarian version. This recipe freezes well.
