  • 4 cloves garlic, minced For garlicky warmth.
  • 2 tablespoons apple cider vinegar Brightens the sauce.

Preparation

  • Pat pork chops dry with paper towels and season both sides with salt, pepper, and smoked paprika.

Make the Sauce

  • In a bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, and Dijon mustard.

Layer in the Slow Cooker

  • Place the pork chops in a single layer in the slow cooker and pour the honey garlic sauce over them.

Cook

  • Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the pork is tender.

Thicken the Sauce (Optional)

  • If you prefer a lacquered glaze, transfer the sauce to a small saucepan and simmer with the cornstarch slurry until thickened.

Finish and Serve

  • Spoon the sauce over the pork chops, garnish with parsley or green onions, and serve hot.

Notes

For a caramelized finish, quickly sear the chops in a hot pan before slow cooking. Add vegetables for a one-pot meal.
