  • 1 tablespoon brown sugar or maple syrup Balances the garlic and builds caramelization; omit for a less sweet, healthier option.
  • 1 teaspoon smoked paprika For warmth and subtle smokiness.
  • 1/2 teaspoon black pepper, freshly ground
  • 2 teaspoons cornstarch mixed with 2 tablespoons cold water To thicken at the end.

Preparation

  • Pat the beef dry and season lightly with salt and black pepper. Drying the meat helps it develop color if you choose to sear.
  • (Optional but recommended) Heat a skillet over medium-high heat, add 1 tablespoon butter, and sear beef in batches for 1 minute per side until browned.
  • Place the beef into the slow cooker. Add minced garlic, remaining butter, beef broth, soy sauce, Worcestershire sauce, brown sugar, and smoked paprika. Give everything a gentle stir.

Cooking

  • Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours.
  • In the last 15 minutes, whisk the cornstarch slurry and pour into the slow cooker to thicken the sauce.
  • Taste and adjust seasoning with salt, pepper, or a splash more soy sauce. Finish with a handful of chopped parsley for color and freshness.
  • Serve hot, spooning plenty of buttery sauce over the beef bites.

Notes

For a dairy-free twist, use vegan butter or olive oil; for a lighter option, trim excess fat and reduce butter to 1 tablespoon.
