  • 1 cup sour cream Greek yogurt is a lighter alternative.
  • 1 cup shredded cheddar cheese Feel free to use any cheese you enjoy.
  • 1 can cream of chicken soup Use a homemade version if preferred.
  • 1/2 cup diced onion Shallots can be used for a milder flavor.
  • Salt and pepper To taste.
  • Optional mix-ins: crispy bacon, green onions, broccoli Add any optional ingredients for extra flavor.

Preparation

  • Wash and peel the potatoes and cut them into thin slices.
  • In a bowl, mix the sour cream, cream of chicken soup, diced onion, salt, and pepper until well combined.

Cooking

  • Layer the potato slices in the slow cooker, followed by a spoonful of the creamy mixture and a sprinkle of cheddar cheese. Repeat until all ingredients are used, finishing with cheese on top.
  • Cover and cook on low for 4 to 6 hours or high for 2 to 3 hours, until potatoes are tender and cheese is gooey.

Serving

  • Add optional toppings like crispy bacon bits or chopped green onions before serving.

Notes

These potatoes make great leftovers. Store them in an airtight container for up to 3 days, or freeze. When reheating, add a touch of milk or cream for creaminess.
