Preparation

  • In a skillet, sauté the chopped onion and minced garlic in a bit of oil until fragrant, about 2-3 minutes.
  • In the same skillet, add the beef chuck roast pieces seasoned with salt and pepper. Brown the meat on all sides for about 5-7 minutes.
  • Transfer the sautéed onions and garlic to your slow cooker. Layer the browned beef on top along with the sliced mushrooms. Pour in the beef broth and Worcestershire sauce, stirring gently to combine.

Cooking

  • Cover and set your slow cooker to low for 6-8 hours, or high for 3-4 hours.
  • In the last 30 minutes of cooking, stir in the sour cream to create a creamy delight.

Serving

  • Dish out the stroganoff over egg noodles, rice, or your favorite gluten-free option. Garnish with fresh parsley.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat gently on the stovetop, adding a splash of broth if needed. For a thicker sauce, whisk a tablespoon of cornstarch into cold water and stir it into the slow cooker in the last hour of cooking.
