  • 4 cloves Garlic, minced Essential for flavor.
  • 1 inch Ginger, minced Adds warmth and spice.
  • to taste Green Onions (for garnish) Adds freshness.
  • Vegetables (carrots, mushrooms, or bok choy) Feel free to mix and match for color and nutrients.

Preparation

  • Begin by trimming excess fat from the beef chuck roast, then cut into chunks. Season lightly with salt and pepper.
  • Place the beef in the slow cooker and add minced garlic and ginger, followed by the chuck roast, broth, soy sauce, and assorted vegetables.

Cooking

  • Cover and set your slow cooker to low for 8 hours, or high for 4 hours.
  • About 10 minutes before serving, prepare the ramen noodles separately according to package instructions, but do not overcook.

Serving

  • Once the beef is tender, shred it with two forks. Add the cooked ramen noodles to the slow cooker, stirring gently to mix everything together.
  • Serve into bowls and garnish with chopped green onions.

Notes

This dish is great for leftovers; it tastes even better the next day. To reheat, add a bit more broth to prevent dryness. You can also freeze it for up to three months.
