  • Preheat your oven to 375°F (190°C).
  • Cut the tops off the bell peppers and scoop out the seeds. Place them upright in a baking dish.
  • In a large skillet, heat a drizzle of oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic for 1 minute.

Cooking

  • Add the ground beef to the skillet. Cook until browned and no longer pink, breaking it apart with a spatula.
  • Stir in the Sloppy Joe sauce and season with paprika, salt, and pepper. Let it simmer for a few minutes until thickened.
  • Spoon the meaty mixture into each bell pepper, packing them generously.
  • Top each stuffed pepper with shredded cheese.
  • Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil for the last 5 minutes.

Serving

  • Let the peppers rest for a few minutes before serving.

Notes

For added spice, include diced jalapeños or hot sauce in the meat mixture. These peppers can be made a day ahead, wrapped, and refrigerated until ready to bake.
