Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  • Add the diced onion, green bell pepper, and minced garlic to the pan. Cook for another 5 minutes until the veggies soften.
  • Stir in the barbecue sauce, kidney beans, and corn. Cook together for about 2-3 minutes.

Assembly

  • In a greased casserole dish, spread half of the meat mixture as the base.
  • Sprinkle a layer of tortilla chips over the meat, then add half of the cheese.
  • Repeat with the remaining meat mixture and finish with the rest of the cheese on top.

Baking

  • Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  • Let it rest for a few minutes before serving, maybe sprinkle with chopped green onions.

Notes

Consider adding cream cheese for creaminess or jalapeños for heat. Mix in spinach or kale for added nutrition. Store leftovers in airtight containers for up to 3 days in the refrigerator or freeze for 2 months.
