Preparation

  • Preheat your oven to 400°F (200°C). Slice the baguette into 1/2-inch thick slices. Arrange them on a baking sheet.
  • Bake the slices in the preheated oven for about 5-7 minutes, or until they are golden and crisping.
  • In a mixing bowl, combine the ricotta cheese, honey, a pinch of salt, and freshly cracked pepper. Whip until smooth and creamy.
  • Wash and slice the peaches into thin wedges and toss them gently in a bowl with a drizzle of olive oil and a sprinkle of salt.

Assembly

  • Spread a generous layer of whipped ricotta onto each toasted baguette slice.
  • Top with a few peach slices, and finish with fresh basil leaves.
