  • 1 bell pepper (any color) Adds a sweet crunch; feel free to mix it up with different colors.
  • 1 small onion Brings warmth and depth; shallots can be a lovely substitute.
  • 2 cloves garlic Freshly minced is best for an aromatic touch; garlic powder works in a pinch.
  • 1 can diced tomatoes (14 oz) Use fire-roasted for an extra kick!
  • 1 cup corn kernels Fresh, frozen, or canned will do; this adds a pop of sweetness.
  • 1 cup cooked elbow macaroni Gluten-free pasta can replace traditional for a healthier option.
  • 2 tablespoons taco seasoning A homemade blend can elevate the flavors even more.
  • to taste salt and pepper Because seasoning is key in any recipe.
  • 1 tablespoon olive oil Used to sauté the vegetables and brown the meat; feel free to use avocado or coconut oil.

Preparation

  • In a large skillet, heat a tablespoon of olive oil over medium heat. Once shimmering, add the chopped onion and bell pepper; sauté for about 3 minutes until they begin to soften.
  • Add the minced garlic and stir for another minute; your kitchen will smell amazing at this point!
  • Push the veggies to the side and add the ground beef to the skillet. Cook, breaking it apart, until browned and fully cooked, about 5-7 minutes.
  • Drain any excess fat, then stir in the taco seasoning, cooked macaroni, corn, and diced tomatoes. Mix everything well and bring to a simmer.
  • Let it cook for an additional 5-7 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro or cheese, if desired.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat on the stove or in the microwave until warm. For longer storage, freeze in portions for up to 3 months.
