Ingredients
  

Pasta

  • 8 oz linguine or spaghetti A classic pasta that perfectly captures the sauce.

Shrimp and Sauce

  • 1 lb large shrimp, peeled and deveined Fresh or frozen work, but thaw if using frozen shrimp.
  • 4 tbsp unsalted butter This adds richness to the dish.
  • 3 tbsp olive oil For sautéing and flavor; avocado oil can be used for a lighter option.
  • 4 cloves garlic, minced The aromatic backbone of this dish — never skimp on garlic!
  • 1/4 tsp red pepper flakes Adds a gentle kick; adjust to taste.
  • 1/2 cup dry white wine Enhances the dish; can substitute with vegetable broth for non-alcoholic version.
  • Juice of 1 lemon Brightens up the dish; zest can be added for extra citrus flavor.
  • Salt and pepper, to taste Essential seasonings.
  • Fresh parsley, chopped, for garnish Adds color and freshness.

Instructions
 

Cooking the Pasta

  • In a large pot, bring salted water to a boil. Add the linguine and cook until al dente, according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.

Sautéing the Shrimp

  • In a large skillet over medium heat, melt 2 tablespoons of butter with 2 tablespoons of olive oil. When hot, add the shrimp, salt, and pepper. Cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from the skillet and set aside.

Building the Sauce

  • In the same skillet, add the remaining olive oil and butter. Sauté minced garlic and red pepper flakes until fragrant, about 30 seconds. Pour in the white wine, letting it simmer for 2-3 minutes until slightly reduced.

Combining

  • Return the shrimp to the skillet. Add the lemon juice and pasta, tossing to combine. If the mixture seems dry, add reserved pasta water a little at a time until you achieve your desired consistency.

Garnishing

  • Sprinkle the chopped parsley over the pasta for a fresh touch. Taste and adjust seasoning if necessary.

Serving

  • This dish is best enjoyed fresh out of the skillet!

Notes

To keep your Shrimp Scampi Pasta at its best, refrigerate leftovers in an airtight container for up to 2 days or freeze for up to 3 months.
