Marinade Ingredients

  • 1.5 pounds Chicken Breast, cut into 1.5-inch cubes Tender cuts are best.
  • 1 cup Greek Yogurt Preferred for creaminess. Dairy-free option: use coconut yogurt.
  • 1/4 cup Lemon Juice, freshly squeezed For brightness.
  • 4 cloves Garlic, minced The more, the merrier!
  • 2 tablespoons Olive Oil For richness and moisture.
  • 1 teaspoon Cumin Adding warm earthiness.
  • 1 teaspoon Paprika Giving a gentle kick.
  • 1 teaspoon Salt Essential for flavor enhancement.
  • 1/2 teaspoon Black Pepper For a subtle heat.
  • pieces Skewers (Wooden or Metal, soaked if wooden) To prevent burning.

Instructions

Preparation

  • In a large bowl, combine yogurt, lemon juice, minced garlic, olive oil, cumin, paprika, salt, and black pepper. Whisk until smooth.
  • Add the cubed chicken to the marinade, ensuring each piece is thoroughly coated. Cover and refrigerate for at least 1 hour (or up to 4 hours for enhanced flavor).
  • Preheat your grill (or grill pan) to medium-high heat.
  • Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.

Cooking

  • Place the skewers on the grill, cooking for about 10-15 minutes. Turn occasionally until the chicken is cooked through and has nice grill marks.
  • Remove from the grill and let rest for 5 minutes to keep them juicy.
  • Serve with pita bread, fresh veggies, and your favorite dipping sauces.

Notes

Add a splash of pomegranate molasses for flavor, alternate chicken with cherry tomatoes or zucchini on skewers, serve over greens for a lower-carb option.
