  • 1 lb ground lamb or beef Feel free to swap the lamb for beef for a milder flavor or a plant-based option for a vegetarian twist.
  • 1 cup diced carrots You can use frozen mixed vegetables for convenience.
  • 1 cup frozen peas Fresh peas work too; just toss them in for the last few minutes of cooking.
  • 1 medium onion, diced
  • 2 cloves garlic, minced For that aromatic undertone.
  • 2 tbsp tomato paste
  • 1 cup beef or vegetable broth
  • 1 tbsp Worcestershire sauce A splash of this adds depth.

Topping

  • 4 cups mashed potatoes You can use store-bought for a quicker prep.
  • Salt and pepper to taste
  • 1 tbsp olive oil Feel free to use butter for a richer flavor.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until translucent.
  • Add the ground meat, breaking it down with a spatula until browned and fully cooked.
  • Stir in the diced carrots and peas, letting them cook for about 5 minutes until they soften.
  • Mix in the tomato paste and Worcestershire sauce, cooking for another 2 minutes. Pour in the broth and season with salt and pepper to taste.
  • Transfer the meat mixture to a baking dish, spreading it evenly.
  • Top with the creamy mashed potatoes, smoothing it out or creating peaks.

Baking

  • Place your Shepherd's Pie in the oven and bake for about 25-30 minutes, until the top is golden brown and slightly crisp.

Serving

  • Remove from the oven and let it cool for a few minutes before serving.

Notes

Consider using sweet potatoes for a nutritious twist or add cheese on top for extra indulgence. Leftovers can be stored in an airtight container in the fridge for up to three days.
