Ingredients
  

For the Rolls

  • 12 pieces Rice paper wrappers Look for round wrappers for best results.
  • 1 lb Ground beef Use lean cut or substitute with ground turkey or chicken.
  • 1 cup Thai basil Aromatic and slightly peppery.
  • 1 cup Mixed vegetables (carrots, bell peppers, cucumber) Finely julienned for crunch and color.
  • 2 cloves Garlic Minced.
  • 1 inch Ginger Grated.
  • 2 tbsp Soy sauce For seasoning.
  • 1 cup Peanut sauce For dipping.

Cooking the Beef

  • In a skillet over medium heat, add the ground beef. As it cooks, break it apart with a wooden spoon. Once it’s browned and cooked through, drain excess fat.
  • Stir in minced garlic and grated ginger to the beef, cooking for an additional minute until fragrant.
  • Pour in soy sauce, then toss in the Thai basil. Stir until well combined.

Preparing the Rolls

  • While the beef cools, julienne your chosen vegetables.
  • Fill a shallow dish with warm water and soak rice paper wrappers one at a time for about 10-15 seconds until just pliable.
  • Lay the wrapper on a clean surface, add a couple of spoonfuls of the beef mixture and veggies. Fold the sides inward and roll tightly from the bottom up.
  • Arrange the rolls on a platter and serve with your favorite peanut sauce for dipping.

Notes

For a vegetarian option, swap the beef for tofu or a mixture of mushrooms and zucchini. Use fresh vegetables for the best crunch and taste. Leftover rolls can be stored in an airtight container in the refrigerator for up to 2 days. Keep filling separate from wrappers if making ahead to avoid sogginess.
