  • 1 medium onion Chopped; it provides sweetness and aroma.
  • 3 cloves garlic Minced; fresh garlic makes all the difference in flavor.
  • 1 teaspoon dried Italian herbs A blend of basil, oregano, and thyme elevates the dish.
  • to taste Salt and pepper Essential for enhancing overall flavors.
  • 2 tablespoons olive oil For sautéing and drizzling – adds richness and helps with roasting.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large skillet over medium heat, add the Italian sausage and break it up with a wooden spoon. Cook until browned, about 5-7 minutes.
  • Add the chopped onion and minced garlic to the skillet. Sauté for an additional 3 minutes until the onion becomes translucent.
  • While the sausage is cooking, wash and chop the potatoes into bite-sized pieces. Add them to the skillet and cook for another 5 minutes, stirring occasionally.
  • Add the fresh green beans, dried Italian herbs, salt, and pepper to the skillet. Drizzle with olive oil and stir to combine.
  • Pour the sausage-vegetable mixture into a greased 9×13-inch baking dish and spread it evenly.
  • Bake in the preheated oven for 20 minutes, or until the potatoes are tender and everything is slightly caramelized. If using Parmesan cheese, sprinkle it on top during the last 5 minutes of baking.
  • Remove from the oven and let it rest for a few moments before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and can be reheated in the microwave or sautéed on the stovetop.
