  • 1 pound mild or spicy breakfast sausage browned and crumbled; turkey sausage for a lighter option
  • 1 cup shredded cheddar cheese substitute with nutritional yeast for dairy-free
  • 1/2 cup diced bell pepper adds color and sweetness
  • 1/4 cup finely chopped green onion brightens the flavor
  • 1 tablespoon olive oil or butter for the skillet
  • 6 large flour tortillas or low-carb wraps whole-wheat for extra fiber

Preparation

  • Heat a skillet over medium heat, add the sausage, and cook until golden and cooked through. Spoon out any excess grease.
  • In the same skillet, add olive oil and toss in the bell pepper and green onion. Cook for 2 minutes until tender-crisp.
  • In a bowl, whisk the eggs with a pinch of salt and pepper. Pour into the skillet with the veggies and gently scramble until just set but still soft.
  • Return the cooked sausage to the skillet, stir in the shredded cheese until melted, then remove from heat.
  • Lay a tortilla flat, spoon a generous 1/3 cup of filling along one edge, and roll tightly. Repeat with remaining tortillas.
  • For a crisp exterior, brush the rolls lightly with butter or oil and toast in a hot skillet for 1–2 minutes per side until golden.
  • Slice on the diagonal for presentation and serve immediately.

Notes

If feeding a crowd, keep finished roll-ups warm in a 200°F oven while you finish the rest. Tips for variations include using smaller tortillas for lunchboxes, adding greens, or substituting ingredients for dietary preferences.
